Some days call for a lunch that is ready before the kettle has even boiled. This 10-minute senior lunch is one of them — creamy, soft, and easy on both the teeth and the schedule.

Avocado brings heart-friendly fats and a smooth texture, while the toasted bread underneath gives just enough structure to hold it all together.

How to make it

Toast the bread to your liking — golden and warm works best.

While it toasts, scoop the avocado into a bowl and mash it with a fork until smooth and creamy.

Stir the lemon juice and black pepper into the mashed avocado.

Spread the avocado generously over each slice of warm toast.

Top with the halved cherry tomatoes if using, and enjoy straight away.

Cook's note

Only used half the avocado? Leave the pit in the other half, sprinkle it with lemon juice, and cover it tightly. It will stay green in the refrigerator until tomorrow.
