Heart-Healthy Salmon Bowl

Salmon is one of the kindest foods you can offer your heart. Rich in omega-3 fats, it sits at the center of many meals planned for heart-healthy eating for older adults — and it happens to be quick and forgiving to cook.
Served over soft grains and gentle greens, this bowl is easy to chew, easy to portion, and easy to love. The salmon bakes while you set the rest of the bowl, so timing takes care of itself.
How to make it
Heat the oven to 400°F (200°C) and line a small baking sheet with parchment.
Pat the salmon dry, brush with a little olive oil, and sprinkle with garlic powder, paprika, and black pepper.
Bake for 12 to 15 minutes, until the salmon flakes easily with a fork.
While it bakes, warm the cooked grains and wilt the spinach in a pan with the rest of the olive oil for two minutes.
Build each bowl with grains, then greens, then a salmon fillet on top. Finish with a squeeze of lemon.

No fresh salmon on hand? Canned salmon works well in this bowl too and is gentle on a fixed grocery budget. Just flake it over the warm grains and skip the baking step.
