Soft Slow-Cooker Pot Roast
Fork-tender beef and soft vegetables that cook low and slow all day — a warm, easy-to-chew comfort meal that practically makes itself.
Few meals say comfort quite like a slow-cooked pot roast. Hours of gentle heat turn the beef so tender it falls apart at the touch of a fork, which makes this a wonderful choice as a soft food for seniors and anyone who finds tougher textures hard to manage.
The slow cooker does almost everything. You spend fifteen minutes in the morning, then come back at dinner to a fork-tender, easy-to-swallow meal that filled the house with a wonderful smell all day.
How to make it
Place the carrots, potatoes, and onion in the bottom of the slow cooker.
Season the beef with black pepper, then set it on top of the vegetables.
Sprinkle the garlic, thyme, and rosemary over the beef, then pour in the beef broth.
Cover and cook on low for 7 to 8 hours, until the beef pulls apart easily with a fork.
Shred the beef gently, spoon the soft vegetables alongside, and ladle the savory juices over the top.
Cook's note
For an even softer plate, mash the cooked potatoes and carrots together with a little of the cooking broth. It turns this into a smooth, easy-to-swallow meal without losing any flavor.
